In this current heat wave, something cool, light, mouthwatering and crisp is needed. Think Sauvignon Blanc--Chardonnay is way too heavy and full-bodied.
Sauvignon Blancs are light to, no more than, medium bodied and feature flavors that range from citrus to tropical to exotic to herbal.
Sauvignon Blancs don't age well so that is a perfect excuse to drink them now--definitely within a few years of the vintage date.
Consider them as a brightening squirt of lemon--perfect with oysters, practically all fish and other white meats. They also stand up well to tangy sauces and they are light enough to just enjoy in place of a highly alcoholic (and, therefore, warming) cocktail.
